I made these wonderfully easy scarves for Christmas gifts last year. I used the Lion Brand Yarn Homespun. It is 98% acrylic and 2% polyester, but very soft and very inexpensive.
I used size 10 1/2 knitting needles
1 skein of yarn
Cast on 16 or 18.
Knit across making a garter stitch. Slip the last stitch in each row.
Make as long as you like. Mine are around 75 inches.
